qchCheese Corn Quiche – This wholesome, layered, crustless quiche recipe is a snap to whip up! Vitamin rich, healthy corn and classic creamy cheese oven baked until hot and bubbling and golden brown. A very simple, easy crustless quiche recipe, that also happens to be vegetarian.

Ingredients to make Cheese Corn Quiche

3 eggs
1 cup whole milk or half-and-half
4 tablespoons melted butter
2 cups fresh corn kernels, or one 16-ounce package frozen corn, thawed
1/2 teaspoon salt
1/4 teaspoon pepper
pinch of cayenne pepper
1/4 teaspoon nutmeg
1/2 pound Vermont cheddar cheese, thinly sliced
2 tablespoons grated Parmesan cheese

Directions to make Cheese Corn Quiche

Step 1:

Beat together eggs, milk, and butter. Stir in corn, salt, pepper, cayenne, and nutmeg. Beat together eggs, milk, and butter. Stir in corn, salt, pepper, cayenne, and nutmeg.

Step 2:

Place half of mixture in a buttered pie pan or 1 1/2-quart baking dish. Spread with Cheddar cheese, top with remaining corn mixture, and sprinkle with Parmesan cheese. Bake at 325F for approximately 45 minutes, or until set. Let stand a few minutes before cutting.
